Pale straw in colour. A complex nose of poached pears, grapefruit, quince, with hints of herbs, nuts, woodsmoke and flint. The palate is finely structured; smooth, succulent, layered and long. Lemon sherbet, red grapefruit and pear flavours seamlessly interwoven with suggestions of almond meal, brioche, and subtle oak spice. Mouth-watering, saline acidity and an impressively persistent finish makes this a great foil to prawn ravioli.
